Brew
- ~0:00 Setup: invert the AeroPress, rinse the filter cap with hot water and preheat the cup. Grind 15g medium-coarse, slightly coarser than your usual AeroPress setting.
- ~0:00 Bloom: add the grounds, pour 40g water at 88°C evenly to saturate, then a gentle swirl, not a stir. This coffee degasses slowly, so don't rush it.
- ~0:30 Main pour: pour 160g water at 88°C in a slow, steady spiral over about 40 seconds, reaching 200g total. Avoid turbulence for a clean, sweet extraction.
- ~1:10 Steep: leave it undisturbed. The honey/anaerobic process releases sugars gradually, so no stirring, just wait.
- ~1:45 Stir and cap: one slow stir from bottom to top, attach the filter cap, then flip onto the cup carefully.
- ~1:55 Press: press slowly and steadily over 30 to 35 seconds with light pressure. Stop at the first hiss of air; the last drops carry harsh, bitter notes that clash with the banana profile.
Notes
Grind coarser than a typical AeroPress recipe; on the Silberthal, around mid-range. Sour or thin: grind finer or steep 10-15s longer. Muddy or bitter: grind coarser or drop to 86°C.
